"Superkid" Ice Cream Cake Recipe

So let me tell you why I would come up with this crazy idea since I do not like SUPERKID ice cream at all. My boyfriend's birthday was just last week and he got 2 dairy queen ice cream cakes and a red velvet birthday cake courtesy of Sugar Therapy. Randomly on his birthday, his sister goes to me and says something along these lines "Laura Secord should make ice cream cakes because a SUPERKID icecream cake would be awesome". Then it clicked in my head A's birthday is next week I should make her this for her birthday. This was just a basic recipe not even a recipe really just because A does not like the cookie crumb part of an ice cream cake =( but it is a stepping stone to more to come.




Ingredients and Tools
Piping Bag, Tips and Couplers
9inch cheesecake pan
Spatula
kitchenaid professional mixer
Saran Wrap
4 hand packed tubs of Superkid Icecream (has to be from Laura Secord)
1 tub of irresistable natural vanilla ice cream
Vanilla
Butter
Icing Sugar
Rose colour Food colouring

Before doing this, I placed the pan in the freezer for about 6 hours.

The ice cream was taken out of the freezer for about 10 minutes to soften up just enough to spread it around the pan if it gets too liquidy the ice cream won't freeze up right.



I actually didn't have enough vanilla ice cream, so my boyfriend had to run out to get me another tub, he got me a tub of chapman's vanilla ice cream and we used probably half of that.

Step 5: Placed into the freezer overnight to harden up

Tick Tock. Tick Tock.


TADA!! this is how it looks like after I took it out of the freezer. Not to bad I'd say. To get it out of the pan, I took a mini bbq lighter around the outside of the pan to loosen up the pan and pop the cake came out with the help of some friends.

But I'm not done yet, I have to make the icing and attempt to decorate this cake.


Buttercream Icing
1/4 cup of room temperature butter
1/2 tsp of vanilla
1 cup of icing sugar






Be careful of the food colouring because it can stain your fingers like this!!


The final product!! It wasn't as nice as I hoped it would be but it was a crowd pleaser I'd say. I was pretty worried about the superkid not turning out nicely since it was a mixture of colours but all the colours came through nicely =).


After making this ice cream cake, I grasped on to a few things that might make things less messy.

1. freeze the pan with the saran wrap
2. in between each layer to place the pan back into the freezer to harden up a bit
3. purchase more hand packed tubs
